Ingredients

The ingredients are:
  • 416 grams dry rice (dry 2 1/4 cups glutinous or sweet rice)
  • 2 cups water
  • 940 grams coconut milk (4 cups, 2 cans)
  • 608 grams coconut cream (2 cups, 1 can)
  • 1/4 teaspoon salt
  • 2 cups brown sugar
  • 2 teaspoons vanilla extract

How to Make

  • Step 1: Preheat the oven to 350 F.

  • Step 2: In a rice cooker or cooking pot, combine water and rice. Cook until the rice fully absorbs the water. Note that the rice should NOT be fully cooked at this point. Remove from heat.

  • Step 3: While rice is cooking, combine the coconut milk, coconut cream, salt, sugar, and vanilla in a large mixing bowl. Whisk until all the ingredients are well blended.

  • Step 4: When the rice has finished par-boiling, add it to the cream mixture. Stir until thoroughly combined. Pour into a lightly greased baking dish.

  • Step 5: Bake for 40 to 60 minutes or until the top turns medium brown. Remove from the oven and let cool for at least 30 minutes.
