Ingredients

The ingredients are:
  • 3 large eggs
  • 1/2 cup orange juice
  • 1 1/2 cups granulated sugar
  • 1/2 cup oil (vegetable oil)
  • 2 cups all-purpose flour (sifted)
  • 1 tablespoon baking powder
  • 2 bananas, whole (large & ripe)
  • 1/4 cup granulated sugar
  • 1 tablespoon ground cinnamon

How to Make

  • Step 1: Beat the egg yolks, orange juice, sugar & oil in a lrg bowl. Add the flour & baking powder (a little at a time), mixing well after each addition.

  • Step 2: In a separate bowl, beat the egg whites to form stiff peaks & gently fold them into the batter until blended.

  • Step 3: Pour the batter into a greased & lightly floured bundt pan.

  • Step 4: Cut the bananas into thin coins & place slices over the entire top of the batter.

  • Step 5: Combine 1/4 cup sugar w/1 tbsp grd cinnamon & sprinkle the mixture atop the banana covered batter.

  • Step 6: Bake in preheated oven at 350F for approx 45 min until golden.

  • Step 7: Allow to cool slightly & then remove the cake from the pan to fully cool.

  • NOTE: Although not a part of the recipe, I tend to always do a wooden skewer test & suggest it for this cake.
