Ingredients

The ingredients are:
  • 1 large egg
  • 1 tablespoon water
  • 1 teaspoon soy sauce (preferably light-colored)
  • 1/2 teaspoon granulated sugar
  • 1 tablespoon bonito flakes (optional, for added flavor)
  • 1 teaspoon oil (canola oil, for the pan)
We recommend you get your ingredients ready before you start cooking. Once you're ready, here are the steps to making this delicious recipe

How to Make

  • Step 1: Mix all the ingredients, EXCEPT OIL, with a fork or chopsticks until thoroughly mixed. Heat up a small (6 inch or 15cm) non-stick frying pan and spread thinly with oil (or use a non-stick cooking spray).

  • From this point on, it only takes about a minute and a half!

  • Step 2: Once the pan is hot (if you put a droplet of water in, it dances and evaporates immediately), pour in the egg. Stir gently with a fork or chopsticks until it’s half-set.

  • Step 3: Fold in half with a spatula.

  • Step 4: Fold one third of the egg over with the spatula. Press down.

  • Step 5: Fold the other end of the egg over with the spatula. Press the whole thing down.

  • Step 6: Flip over, and press again. Remove from the heat before it browns too much. (If you use light colored soy sauce, it won’t get as brown.)

  • Step 7: Cut in half and put cut side up, it will be nicely multi-layered.
