Ingredients

The ingredients are:
  • 1 tablespoon olive oil
  • 1 large onion, chopped
  • 2 garlic cloves, minced
  • 1 1/2 pounds ground beef
  • 3/4 teaspoon dried basil, divided
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon dried thyme
  • 3/4 teaspoon garlic salt, divided (preferably course grain)
  • 1/2 teaspoon black pepper
  • 1 (4 ounce) can mushrooms, drained
  • 1 (15 3/4 ounce) can black beans, rinsed and drained
  • 1 (15 ounce) can whole-kernel corn, drained
  • 1 (15 ounce) can lima beans, drained
  • 3 cups spaghetti sauce (whatever you like)
  • 1/3 cup Parmesan cheese (the stuff in the can works just fine)

How to Make

  • Step 1: Preheat oven to 350F. Heat olive oil in a large skillet; add onion and garlic and saute 5 minutes, or until onion is tender.

  • Step 2: Add ground beef, 1/2 teaspoon basil, oregano, thyme, 1/2 teaspoon garlic salt, salt and pepper and saute until ground beef is browned, about 10 minutes. Drain excess liquid.

  • Step 3: Spray a 3-quart casserole dish with cooking spray. Spread meat mixture evenly over bottom of pan and spread about half the spaghetti sauce over the top.

  • Step 4: Layer, in order, mushrooms, black beans, corn and lima beans; spread remaining spaghetti sauce over top, covering vegetables completely. Sprinkle with remaining basil and garlic salt.

  • Step 5: Cover and bake for 30-35 minutes. Sprinkle with Parmesan and bake, uncovered, for 5 minutes more.
