Ingredients

The ingredients are:
  • 1 pound conch (fresh or frozen)
  • 1 medium red onion, diced
  • 1 cup celery, diced
  • 1/4 pound cucumber (peeled and diced, 1/2 cucumber)
  • 2 medium tomatoes (chopped)
  • 1 green bell pepper, diced
  • 1 red bell pepper, diced
  • 1/3 cup orange juice (fresh)
  • 3 limes, whole (just the juice, divided use)
  • 1 habanero pepper, deveined and finely minced (to taste)
  • 3/4 teaspoon salt (to taste)
  • 1/2 teaspoon pepper (to taste)

How to Make

  • Step 1: Wash the conch thoroughly. Dice roughly into 1/4 inch cubes, then place in a bowl. Add water to cover, plus the juice of one lime. Let stand for 30 minutes, then drain.

  • Step 2: Combine the drained conch, the onion, celery, cucumber,green and red peppers, and the juices. Mix well.

  • Step 3: Add diced habanero, salt and pepper to taste.

  • Note: you can add a dash of worcestershire sauce to your salad, and have bottles of hot sauce (Tabasco-type) to serve alongside.
