Ingredients

The ingredients are:
  • 219 grams ciabatta bread (sliced, 1/2 loaf)
  • 3 tablespoons olive oil
  • 1/2 tablespoon honey (clear honey)
  • 1 teaspoon lemon juice
  • 4 cups salad greens (mixed)
  • Fresh mint leaves, torn (Optional - I will definitely use)
  • 580 grams peaches (4 fresh peaches, cut into 8 sections - Based on the average wt of a fresh peach at 145 gm each)
  • 140 grams blue cheese (or Brie, cut in sml chunks)
  • 100 grams sugar snap peas (halved)

How to Make

  • Step 1: Toast the ciabatta slices, drizzle w/2 tbsp olive oil & gently cut in bite-sized pieces.

  • Step 2: Make the dressing by whisking together the remaining oil, honey & lemon juice. Season to taste w/salt & pepper. (See Note Below)

  • Step 3: Mix all of the ingredients in a lrg bowl, tossing w/the dressing before serving.

  • NOTE RE DRESSING: The volume will be very sml & is probably meant to be a light glaze, but feel free to make a larger volume as desired. I know I will
