Ingredients

The ingredients are:
  • 3 large eggs
  • 1/2 cup orange juice
  • 1 1/2 cups granulated sugar
  • 1/2 cup oil (vegetable oil)
  • 2 cups all-purpose flour (sifted)
  • 1 tablespoon baking powder
  • 2 bananas, whole (large, ripe bananas)
  • Sugar and cinnamon, for topping (I mixed 2 tablespoons sugar with 1 1/2 teaspoons cinnamon and then sprinkled this on top)

How to Make

  • Step 1: Beat the egg yolks, orange juice, sugar, mashed bananas and the oil in a blender or kitchenaid mixer.

  • Step 2: Place the egg and sugar mixture into a large bowl and add the flour a little at a time mixing well.

  • Step 3: Add the baking powder and mix well. (I mixed the baking powder with the flour in a plastic bag, and did add a large pinch of sea salt)

  • Step 4: In a separate bowl, beat the egg whites to form stiff peaks.

  • Step 5: Gently fold the egg whites into the batter until mixed.

  • Step 6: Pour the batter into a greased and lightly floured bundt pan.

  • Step 7: Make a mixture of sugar and cinnamon and sprinkle over the banana cake.

  • Step 8: Bake in pre-heated oven at 350 degrees F. for approximately 45 minutes until golden.

  • Step 9: Let cool slightly and remove cake. Then serve and enjoy!!
