Step 1: Devein the prawns and set aside.
Step 2: Combine the cornflour, self raising flour and salt into a bowl and stir in the egg and water and mix together to make a smooth batter.
Step 3: Heat oil in a pan (I use a deep fryer) and heat to 180C or until a square of bread dropped into the hot oil and it rises to the surface and is brown it is ready.
Step 4: Dip the prawns into the batter and fry in the hot oil and then remove and drain on paper towel, you will needs to do this in batches and depending on size of fryer as to how many batches this will take will direct how long it will take to cook, so times given are estimated.
Step 5: Heat the honey, lemon, chilli sauce and dried chilli in a jug and heat in the microwave or put in a saucepan and heat gently on the stove top.
Step 6: Plate up prawns and drizzle with sauce and scatter toasted sesame seeds over, we only used half the sauce on the prawns and used the other half to put over our rice or you could use all for the prawns if you wish.
