Step 1: Preheat oven to 180C/160C fan forced.
Step 2: Grease a 6 hole (3/4 cup) Texas muffin tray.
Step 3: Combine mince, breadcrumbs and egg in a large bowl.
Step 4: Process onion, carrot, celery and garlic in a food processor until finely chopped.
Step 5: Using hands squeeze excess liquid from vegetable mixture and then add to mince mixture, season and add oregano and mix well.
Step 6: Press 2 pieces of cheese stick into each one and top with 1 teaspoon of barbecue sauce, a baguette slice and tomato and sprinkle with mozzarella.
Step 7: Bake for 55 minutes or until cooked.
Step 8: Stand tray for 10 minutes, drain off excess liquid and then remove from tray and serve.
