Ingredients

The ingredients are:
  • 500 grams beef sausage (links, squeezed from casings)
  • 1 cup breadcrumbs (fresh, soft)
  • 1 large egg (lightly whisked)
  • 1 yellow onion, chopped
  • 1 carrot, chopped
  • 1 ounce celery, chopped (1/2 celery stalk, chopped)
  • 2 cloves garlic, chopped
  • 2 teaspoons dried oregano
  • 3 sticks (15 grams) cheese (cut into 4 pieces)
  • 1 1/2 tablespoons barbecue sauce
  • 6 slices (32 to 34 grams) baguette bread
  • 2 small (8 ounces) roma tomatoes (sliced)
  • 1/2 cup shredded mozzarella cheese

How to Make

  • Step 1: Preheat oven to 180C/160C fan forced.

  • Step 2: Grease a 6 hole (3/4 cup) Texas muffin tray.

  • Step 3: Combine mince, breadcrumbs and egg in a large bowl.

  • Step 4: Process onion, carrot, celery and garlic in a food processor until finely chopped.

  • Step 5: Using hands squeeze excess liquid from vegetable mixture and then add to mince mixture, season and add oregano and mix well.

  • Step 6: Press 2 pieces of cheese stick into each one and top with 1 teaspoon of barbecue sauce, a baguette slice and tomato and sprinkle with mozzarella.

  • Step 7: Bake for 55 minutes or until cooked.

  • Step 8: Stand tray for 10 minutes, drain off excess liquid and then remove from tray and serve.
