Ingredients

The ingredients are:
  • 8 ounces ground pork
  • 8 ounces shrimp, finely chopped
  • 1/2 cup water chestnuts, chopped
  • 1/2 cup green onion, finely chopped
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
  • 1 egg
  • 1 tablespoon soy sauce
  • 1 (8 ounce) package lumpia wrappers (also known as spring roll wrappers, they are thin and white and non-eggy. usually found frozen in Asian stores)
  • Vegetable oil, to fry
  • Thai chili sauce, soy sauce or vinegar with crushed garlic, to serve.

How to Make

  • Step 1: Combine pork, shrimp, water chestnuts, green onions, salt, pepper, egg and soy sauce.

  • Step 2: Take a wrapper and position it so that one of the corners is pointing towards you (diamond shape).

  • Step 3: Place 1 tablespoon of filling on the lower half of the wrapper and squeeze it into a pencil shape horizontally. *When you fill the wrappers, only use a width slightly larger than a pencil or the meat may not cook through before overcooking the wrapper.

  • Step 4: Fold the corner of the wrapper pointing towards you over the pork mixture. Press the wrapper over the mixture, making sure it is snugly wrapped.

  • Step 5: Fold the left and right corners of the wrapper over to the center forming something like an envelope.

  • Step 6: Roll the wrapped pork mixture like a log in a direction away from you. Make sure to roll it tightly or else it might break open when you fry it.

  • Step 7: Brush water or flour paste over the top corner to seal.

  • Step 8: Deep-fry in medium-hot oil until golden brown, drain on paper towels.

  • Step 9: Serve with desired dipping sauces.
