Step 1: In a small cup or bowl mix together the cardamom and the salt. Sprinkle the seasoning along with the lemon peel and pepper on both sides of the chicken.
Step 2: In a skillet over medium heat melt 3 tablespoons of the butter; add onion and saute until soft (under 5 minutes); push onion to the sides and add the chicken to the skillet; saute until brown (5 minutes); turn and sprinkle with the pineapple cubes and saute until cooked through (5 minutes).
Step 3: Stir in broth and pineapple juice and bring to a boil over high heat. Transfer chicken to a platter.
Step 4: Add remaining butter (1 tablespoon) to sauce and boil until thick; scraping up brown bits (5 minutes). Add mint and toss until wilted (about 1 minute). Spoon sauce over chicken.
