Ingredients

The ingredients are:
  • 4 pounds sweet potatoes (pared and sliced)
  • 3/4 cup brown sugar
  • 2 large eggs
  • 1/2 cup raisins
  • 1 lemon (grated rind and juice of)
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 cup evaporated milk
  • 1/2 cup pecans, chopped
  • 1/2 cup melted butter
  • 1/2 cup shredded coconut
  • Miniature marshmallows

How to Make

  • Step 1: Place the potatoes in a pot and add enough salted water to cover. Cook until tender. Drain.

  • Step 2: Preheat the oven to 350°F.

  • Step 3: Mash and whip the potatoes.

  • Step 4: Beat egg whites.

  • Step 5: Add the remaining ingredients (except marshmallows)

  • Step 6: And mix well.

  • Step 7: Fold in egg whites.

  • Step 8: Pour into a greased pam sprayed casserole dish.

  • Step 9: Bake for 30 minutes, some people needed longer cooking.

  • Step 10: Remove from the oven and cover with marshmallows.

  • Step 11: Return to the oven and continue cooking until brown.
