Ingredients

The ingredients are:
  • FOR THE SALAD
  • 2 cups water
  • 170 grams dry quinoa (dry, 1 cup quinoa, rinsed)
  • 2 cups fresh baby spinach, thinly sliced
  • 150 grams grape tomatoes (halved, 2 cups)
  • 1 medium cucumber, seeded and chopped
  • 7 ounce mango (1 small mango, small diced)
  • 1 orange bell pepper, chopped (1 medium sweet pepper)
  • 1 yellow bell pepper, chopped (1 medium sweet pepper)
  • 2 green onions, chopped
  • FOR DRESSING
  • 3 tablespoons lime juice
  • 2 tablespoons olive oil
  • 4 teaspoons honey
  • 1 tablespoon grated lime peel
  • 2 teaspoons minced fresh gingerroot
  • 1/4 teaspoon salt

How to Make

  • Step 1: Bring the water to a boil in a large saucepan. Add the quinoa. Reduce heat; simmer, covered, 12-15 minutes or until liquid is absorbed.

  • Step 2: Remove from heat and fluff with a fork. Transfer to a large bowl, and let it cool completely.

  • Step 3: Stir spinach, tomatoes, cucumber, mango, peppers and green onions into quinoa.

  • Step 4: In a small bowl, whisk the dressing ingredients until well blended. Drizzle over quinoa mixture and toss to coat.

  • Step 5: Refrigerate until serving.
