Step 1: Preheat oven to 220C/200C fan forced.
Step 2: Spray 4 x 10cm (base measurement) tart pans with removable bases with oil
Step 3: Stack pastry on a flat work surface, spraying with oil between sheets.
Step 4: Cut pastry in 4 x 12cm squares and ease a square into base of each prepared pan and spray with oil.
Step 5: Place on an oven tray and bake for 5 minutes or until golden.
Step 6: Meanwhile heat a small frying pan over high heat and spray onion with oil and cook and stir onion for 2 minutes or until soft and then add ham, remove from heat.
Step 7: Spoon ham mixture into pastry cases.
Step 8: Whisk combined milks, eggs and mustard in a jug and then pour into pastry cases and sprinkle with cheese.
Step 9: Bake for 15 minutes or until just set at the centre.
Step 10: Sprinkle with chives and serve with chilli sauce and salad.
