Ingredients

The ingredients are:
  • 4 (400 grams) Granny Smith apples (4 large)
  • 1 tablespoon water
  • 90 gram butter (less if preferred)
  • 1/2 cup granulated sugar
  • 3 cloves
  • Day old sliced white bread, cut thinly and crusts removed
  • Melted butter, the amount will vary with your mould size

How to Make

  • Step 1: Peel, quarter and core the apples and combine with water, the first lot of butter, sugar and cloves and simmer until the apples are soft and almost all the liquid is evaporated and cool the mixture and remove the cloves.

  • Step 2: Butter 4 small soufflé dishes or other moulds well and cut two round of bread for each soufflé dish which neatly fit its diameter or alternatively use a small pudding basin and cut a disc of bread to fit the bottom and top diameter.

  • Step 3: Cut the rest of the bread into 3cm wide strips to line the sides and then brush the bread generously with the melted butter and place one disc in the bottom of the dish and use the strips to line the sides of the dishes in a slightly overlapping fashion.

  • Step 4: Fill the dish with apple and cover the dish with the top disc of buttered bread.

  • Step 5: Bake the Charlottes in a 200C oven for about 30 minutes or until richly golden brown.

  • Step 6: Allow the Charlottes to stand for 10 minutes and then turn out.
