Ingredients

The ingredients are:
  • 8 cups shredded romaine lettuce (make sure leaves are dry)
  • 1 cup green peas (frozen, thawed)
  • 1 yellow bell pepper (diced)
  • 1 1/2 cups grape tomatoes (or quartered cherry tomatoes)
  • 2 celery ribs, sliced
  • 1/2 cup sliced scallions
  • FOR THE DRESSING
  • 6 ounces yogurt (plain, 3/4 cup)
  • 3/4 cup mayonnaise
  • 2 teaspoons cider vinegar
  • 1 to 2 teaspoons granulated sugar
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon salt (to taste)
  • 1/4 teaspoon freshly ground pepper
  • FOR THE TOP
  • 1 cup shredded cheddar cheese
  • 1/2 cup thinly sliced fresh basil
  • 6 to 8 ounces sliced bacon (6-8 slices, cooked bacon, crumbled)

How to Make

  • Step 1: Place lettuce in a large bowl. Layer peas, bell pepper, tomatoes, celery and scallions on top.

  • Step 2: Whisk yogurt, mayonnaise, vinegar, sugar to taste, garlic powder, salt and pepper in a medium bowl until smooth. Spread the dressing evenly over the top of the salad (a spatula is handy for this, if you have one). Sprinkle with cheese, basil and bacon. Serve room temperature or chilled.
