Ingredients

The ingredients are:
  • 1 pound tomatoes (4 large Roma tomatoes, halved horizontally, scoop out inside, you don't need to scrape out everything)
  • 8 tablespoons grated Parmesan cheese
  • 8 tablespoons mozzarella cheese, shredded (finely shredded)
  • Chopped fresh oregano
  • Salt and ground pepper, to taste

How to Make

  • Step 1: Preheat oven to 400°F.

  • Step 2: Blot the insides of each tomato half with paper towels to remove the excess moisture. Sprinkle the insides of the halves with salt, then place cut-side up on a greased baking sheet.

  • Step 3: In a small bowl, combine the finely shredded mozzarella cheese with Parmesan cheese then divide the cheese mixture on each tomato half. Sprinkle with oregano, salt and pepper. Drizzle with oil.

  • Step 4: Bake until the tomatoes are tender, about 15-20 minutes.
