Ingredients

The ingredients are:
  • 1 tablespoon olive oil
  • 1 tablespoon unsalted butter
  • 1 small yellow onion (diced)
  • 3/4 teaspoon cumin
  • Cayenne pepper, pinch
  • 308 grams dry couscous (Israeli couscous, dry, 1 2/3 cups)
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 tablespoon chopped parsley
  • 2 1/2 cups water (boiling)

How to Make

  • Step 1: In a large saucepan. heat olive oil and butter over medium/low - add onions and cook until lightly browned, about 8 minutes.

  • Step 2: Add cumin, cayenne and saute 1 minute more.

  • Step 3: Add couscous, salt, pepper, and boiling water-stir.

  • Step 4: Cover and simmer over low until tender and water is absorbed, about 10 minutes.

  • Step 5: Add parsley, fluff and serve.
