  • 400 grams shrimp (prawns, cooked, peeled and de-veined)
  • 1 cucumber (Lebanese cucumber, peeled, seeded and finely diced)
  • 2 green shallots, finely sliced
  • 2 tablespoons aioli
  • 1 tablespoon ketchup (tomato ketchup)
  • 1/2 teaspoon hot sauce (Tabasco)
  • Lemon juice (from 1/2 lemon)
  • 1/2 teaspoon paprika (smoked paprika)
  • 20 to 22 ounces lettuce (1 head baby cos lettuce)
  • 2 tablespoons chopped pistachios
  • 1/2 cup herbs (mixed baby herbs)
  • Caviar (optional)

How to Make

  • Step 1: Chop the prawns roughly, then mix with the cucumber and shallots.

  • Step 2: Combine the aioli, ketchup, Tabasco, lemon juice and smoked paprika in a small bowl, then toss with the prawn mixture.

  • Step 3: Separate small cos lettuce leaves and trim the ends neatly.

  • Step 4: Spoon the prawn salad on top, then scatter with pistachios and baby herbs.

  • Step 5: Top with a little dob of caviar if using, and serve.
