Ingredients

The ingredients are:
  • 2 pounds raw shrimp (large shrimp, peeled and deveined)
  • 5 tablespoons lemon juice
  • 2 teaspoons granulated sugar
  • 2 teaspoon Dijon mustard
  • 3/4 cup olive oil
  • 1/4 cup shallots, minced
  • 2 ounces mixed greens
  • 2 ounces herb sprigs (such as basil, dill, tarragon and dill or whatever is available)
  • 12 edible flowers (such as herb flowers, pansies, or whatever is available)

How to Make

  • Step 1: Bring a pot of salted water to a boil. Remove from heat and add shrimp - let stand unit opaque in center (under 5 minutes). Drain and let cool.

  • Step 2: In a small bowl or cup mix together the lemon juice, sugar and mustard; gradually whisk in the oil and then stir in the shallots. Season to taste with salt and pepper.

  • Step 3: Arrange the greens, herbs and flowers along the edges of 6 salad plates. Toss shrimp with half of the dressing in a medium bowl. Arrange the shrimp in the center of each of the plates. Drizzle remaining dressing over the greens.
