Step 1: Bring a pot of salted water to a boil. Remove from heat and add shrimp - let stand unit opaque in center (under 5 minutes). Drain and let cool.
Step 2: In a small bowl or cup mix together the lemon juice, sugar and mustard; gradually whisk in the oil and then stir in the shallots. Season to taste with salt and pepper.
Step 3: Arrange the greens, herbs and flowers along the edges of 6 salad plates. Toss shrimp with half of the dressing in a medium bowl. Arrange the shrimp in the center of each of the plates. Drizzle remaining dressing over the greens.
