Ingredients

The ingredients are:
  • 250 grams ground beef
  • 125 grams ground pork
  • 125 grams ground veal
  • 2/3 cup breadcrumbs (fresh)
  • 1/2 cup grated Parmesan cheese (fresh grated)
  • 1/2 cup flat leaf parsley (roughly chopped)
  • 1/4 cup fresh oregano, roughly chopped
  • 1 large egg
  • Salt and freshly ground black pepper, to taste
  • 2 cups tomato sauce (sugo, or passata, Italian tomato sauce)
  • 2 teaspoons garlic, minced
  • Basil (2 big sprigs)
  • 1/2 cup freshly grated parmesan cheese, extra
  • 1/2 cup small basil leaves, extra

How to Make

  • Step 1: Combine in a bowl the meats, breadcrumbs, first lot of parmesan cheese, herbs, egg and seasoning and mix together well.

  • Step 2: With wet hands shape the mixture into balls about the size of a walnut and set aside.

  • Step 3: For the sauce place the sugo into a wide based pot with just a splash of water and the garlic and basil sprigs and season well and simmer gently for 5 minutes.

  • Step 4: Retrieve the basil sprigs and discard.

  • Step 5: With the sauce simmering, drop in the balls in a single layer if possible and simmer for 5 minutes or until cooked.

  • Step 6: Serve with freshly cooked pasta and a small scatter of cheese and basil leaves.
