Step 1: Combine in a bowl the meats, breadcrumbs, first lot of parmesan cheese, herbs, egg and seasoning and mix together well.
Step 2: With wet hands shape the mixture into balls about the size of a walnut and set aside.
Step 3: For the sauce place the sugo into a wide based pot with just a splash of water and the garlic and basil sprigs and season well and simmer gently for 5 minutes.
Step 4: Retrieve the basil sprigs and discard.
Step 5: With the sauce simmering, drop in the balls in a single layer if possible and simmer for 5 minutes or until cooked.
Step 6: Serve with freshly cooked pasta and a small scatter of cheese and basil leaves.
