Ingredients

The ingredients are:
  • 300 grams frozen spinach (thawed, chopped)
  • 6 ounces ricotta cheese (3/4 cup)
  • 1/4 teaspoon garlic powder
  • 1/4 cup grated Parmesan cheese
  • 1/2 teaspoon seasoned salt
  • 1/4 teaspoon ground pepper (to taste)
  • 1/8 teaspoon ground nutmeg
  • 28 square (896 grams) wonton wrappers

How to Make

  • Step 1: Using your hands, squeeze out as much excess moisture as possible from the spinach. It should measure about 1 cup.

  • Step 2: Combine the spinach with next 6 ingredients in a medium bowl.

  • Step 3: Boil a pot of water to a gentle simmer.

  • Step 4: Place 4 wonton wrappers on a cutting board. Brush edges with water. Scoop 1 tbsp filling onto half of each wrapper. Fold diagonally in half, forming a triangle. Press edges to seal. Overlap 2 ends together and press to adhere. Repeat with remaining wrappers and filling. Arrange in a single layer on a baking sheet.

  • Step 5: Gently drop the tortellini into pot of gently-boiling water in batches, stirring occasionally, until just tender, about 3 min. Use a slotted spoon to transfer to bowls.

  • NOTE: if not serving right away, drizzle a fair amount of oil in a bowl, add tortellini in and gently toss in the oil so as not to stick together
