Ingredients

The ingredients are:
  • 4 pork rib chops, 1 1/4-1 1/2" thick (I cut my own pocket, but any butcher would be happy to do it for you)
  • Salt
  • Pepper (or if you have a mix of pink, green and black pepper grounds, that is even better)
  • Olive oil
  • Stuffing:
  • 3 cups sour dough bread (2-3 day old bread works best), cut in cubes
  • 2 tablespoons celery, fine diced
  • 2 tablespoons onion, fine diced
  • 2 tablespoons carrot, fine diced
  • 2 tablespoons red or green bell pepper, fine diced
  • 1/4 cup cremini mushrooms, diced
  • 1 small garlic clove, minced
  • 1/4 teaspoon poultry seasoning
  • 1 teaspoon dried parsley
  • 1/4 cup butter, melted
  • 1/2 cup chicken broth (maybe a bit more)
  • Salt and pepper

How to Make

  • Step 1: Chops ... Remove the chops from the refrigerator to take the chill off. If the butcher did not cut a pocket for you; cut a pocket from one end to the other, but don't go too far, you don't want to through the other side, or through the top or bottom. You want to be able to stuff the chops, but also for the stuffing to stay in the chop. Lightly rub the chops with oil and season well on both sides.

  • Step 2: Stuffing ... To a small saute pan, add the butter along with all the vegetables and the garlic, and bring to medium high heat. Cook 3-4 minutes until the vegetables are somewhat tender; they will continue cooking in the oven. Add all the vegetables, including the butter to a bowl along with the bread, poultry seasoning, parsley, and the chicken broth. Mix well and let it set a few minutes to absorb the broth and butter from the vegetables. Season with salt and pepper. If the stuffing feels too dry, add a bit more broth - you want a very moist but not "soggy" stuffing.

  • Step 3: Stuff ... Stuff the pork chop and press the stuffing in as much as possible. Really stuff it in. The stuffing will expand a bit as it cooks - but really add as much as possible.

  • Step 4: Bake ... Transfer the pork chops to a baking dish, cover and bake in a 350 degree oven, middle shelf for 25-30 minutes. Flip the chops, uncover and bake another 10-15 minutes until golden brown. This really depends on the size of the chop and the amount of stuffing. Mine too a total of 40 minutes, but my chops were thick and I had lots of stuffing as you can tell by the picture.

  • Step 5: Serve ... Just ENJOY! Serve with any of your favorites.
