Step 1: Combine the first 4 ingredients (salt - baking soda) in a small cup or bowl - rub mixture over the roast and let stand while preparing grill.
Step 2: Stack bacon slices - keeping the stacks thread a metal skewer through the bacon 6 or 7 times to create accordion shape. Push stack together to compact into a 2 inch length.
Step 3: Using a gas grill turn all the burners to high, cover and heat until hot (15 minutes or so depending on your grill). Turn primary burner to medium and turn off all the other burners -- you may need to adjust the primary burner periodically to maintain grill temp of 300 degrees.
Step 4: Clean and oil cooking grate. Place roast on hotter side of grill and cook until lightly browned on all sides (10-15 minutes). Slide roast to cooler side of the grill, arranging so roast is 7 inches from heat source.
Step 5: Place the skewed bacon on hotter side of the grill - above heat diffuser of primary burner - the bacon should be 4-6 inches from roast and drippings will fall on heat diffuser and produce a steady stream of smoke with minimal flare ups - obviously if there are large flare-ups slide the bacon a bit closer to the roast.
Step 6: Cover and cook until beef registers 125 degrees (about 1 hour). Transfer to carving board, tent with foil and let rest 20 minutes .
Step 7: Discard twine and slice roast 1/2 inches thick.
