  • The following recipe serves 6 people.

Ingredients

The ingredients are:
  • 9 ounce avocado (1 large avocado, ripe, seeded & pulp coarsely chopped)
  • 1 tomato (large, seedy material removed & pulp diced)
  • 6 garlic cloves (roasted, fork-smashed)
  • Red onion (1/8 onion, cut in small dice)
  • 72 grams olives (12 black olives, cut in small dice)
  • 4 ounces pancetta ham (crisped & roughly crumbled)
  • 3 tablespoons fresh basil (chopped, may use 1 tsp dry basil)
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice
  • Salt & pepper (to taste)
  • 1 medium loaf (16 ounces) baguette bread (sliced diagonally into at least 12 slices)
We recommend you get your ingredients ready before you start cooking. Once you're ready, here are the steps to making this delicious recipe

How to Make

  • Step 1: Prepare all the ingredients according to the details of the ingredient list. Gently combine them until well-mixed & chill (covered) in the refrigerator for at least 2 hrs to allow the flavors to blend .. until you are ready to top & serve your bruschetta.

  • Step 2: When ready to serve, divide the mixture in a roughly equal amt & top 12 baguette slices. Yield is approx 6 servings or 2 baguette slices per person.

  • Step 3: NOTE: When I made this recipe, I found it in need of salt & pepper as I usually do, so I revised the ingredient list & suggest a taste test before you decide to add either. I took the pic you see at that time & departed from the recipe in 2 ways: 1) I used sml baguette rolls instead of a larger baguette loaf & 2) I lightly dusted the tops w/the powder variety of Parmesan cheese & to my surprise found I liked it (Just another thought for you to consider)
