Ingredients

The ingredients are:
  • 1 small yellow onion (fine chopped)
  • 2 garlic cloves (fine minced)
  • 1 can (10 1/2 ounce chicken broth (1 1/3 cups)
  • 1 cup salsa (Thick 'N Chunky Salsa)
  • 1/4 teaspoon ground pepper (to taste)
  • Salt (to taste)
  • 16 ounces dry instant rice (dry, 2 cups white, Minute Rice)
  • 4 ounces Velveeta cheese (cut up, 1/4 pound)

How to Make

  • Step 1: In a saucepan heat oil. Add onion in and cook until softened, 3 minutes. Add garlic, cook 1-2 minutes.

  • Step 2: To same saucepan, add broth, salsa and pepper; bring to boil. Add in some salt. Simmer for 3-5 minutes.

  • Step 3: Add in rice and Velveeta cheese cubest; cover. Remove from heat. Let stand 5 minutes. Stir until prepared cheese product is melted.
