Step 1: In a saucepan heat oil. Add onion in and cook until softened, 3 minutes. Add garlic, cook 1-2 minutes.
Step 2: To same saucepan, add broth, salsa and pepper; bring to boil. Add in some salt. Simmer for 3-5 minutes.
Step 3: Add in rice and Velveeta cheese cubest; cover. Remove from heat. Let stand 5 minutes. Stir until prepared cheese product is melted.
