Step 1: Cook pasta according to package directions, omitting salt.
Step 2: Meanwhile in a bowl, combine ricotta cheese, Parmesan cheese, garlic powder, milk and pepper; set aside.
Step 3: Heat 1-2 tablespoon oil in a large skillet over medium-high heat. Add sausage meat, onion and garlic; cook 10-12 minutes or until sausage is browned, stirring occasionally. Add tomatoes and juice from the can, tomato paste; cook over medium-low heat for around 25-30 minutes, stirring frequently. Add salt and pepper in a few minutes before end of cooking). Mix in 3/4 cup mozzarella cheese and cooked pasta to skillet; stir to combine.
Step 4: Dollop spoonfuls of ricotta mixture on top of pasta mixture. Sprinkle with remaining mozzarella cheese. Reduce heat to low; cover and cook 2 to 3 minutes or until ricotta mixture is hot and mozzarella cheese melts.
