  • The following recipe serves 3-4 people.

Ingredients

The ingredients are:
  • 1 avocado (large & newly ripened)
  • 8 ounces Greek yogurt (Use plain, caramel, honey or vanilla flavors)
  • 1/2 cup honey (See NOTE #2 in Prep Steps)
  • 1 can (400 ml) unsweetened coconut milk
  • 1 banana (optional)
  • 1/4 cup oats (rolled oats, optional)
  • 1 cup baby spinach leaves (optional)
  • 1/2 to 3/4 cup crushed ice (optional for desired consistency)

How to Make

  • Step 1: Combine the 1st 4 ingredients in a blender & blend until smooth.

  • Step 2: Choose your desired optional ingredients (oats, banana or spinach leaves) & blend again.

  • Step 3: Adjust for desired consistency by adding crushed ice.

  • Step 4: Serve immediately or chill to serve later. (If serving later, place cling wrap directly over surface of smoothie to prevent any change of color.

  • NOTE #1: Yield is 3 large smoothies (or 4 smaller)

  • NOTE #2: If you opt to use the banana as an ingredient, I suggest using only half the amt of the honey as the banana will add natural sweetness. You can always add more honey after a taste test if desired

  • NOTE #3: I have a wide-mouth jar w/a lid that I use often for recipes like this & then I reach for my trusty hand-held blender so I can get the job done easily & use the jar for storage of any excess
