Ingredients

The ingredients are:
  • 300 grams dates (medjool dates, 12 dates pitted)
  • 1 tablespoon honey
  • 2 teaspoons orange rind (finely grated)
  • 1/2 cup cashew spread
  • 1/2 cup mixed nuts (inseed, sunflower seeds and almond mix)
  • 1/4 cup shredded coconut
  • 1/4 cup dried cranberries (craisins)
  • 1/4 cup pistachio nuts (kernels, toasted, divided)

How to Make

  • Step 1: Place dates, honey, orange rind, cashew spread, LSAS, coconut, cranberries and 1/4 cup pistachios in a food processor and process until well combined and a coarse mixture forms.

  • Step 2: Finely chop remaining pistachios and place in a small bowl.

  • Step 3: Press and roll level tablespoons of mixture into balls and then roll in pistachios to lightly coat.

  • Step 4: Place balls on a plate and refrigerate for 20 minutes or until firm.

  • Step 5: Store balls in an airtight container in the fridge for up to 1 week.
