Step 1: Place 2 cups of strawberry slices and 1/3 to 1/2 cup sugar in a food processor and process until smooth, set aside
Step 2: In a bowl combine the ricotta cheese with cream cheese, confectioners sugar and milk and vanilla; whisk/mix until smooth and combined.
Step 3: Spoon 2 tablespoons of cookie crumbs into the bottom of 4 glass parfait glasses, then top with 2 tablespoons of the strawberry puree, then 1/4 cup of strawberry slices, 3 tablespoons of the ricotta mixture; repeat the layers.
Step 4: Drizzle the remaining strawberry puree over the top of each parfait.
Step 5: Top with whipped cream and garnish with 1 whole strawberry if desired
