Ingredients

The ingredients are:
  • 1 tablespoon oil (vegetable oil)
  • 300 grams cucumber (2 cups, lemon cucumber or any other cucumber, sliced 1/4 inch thick)
  • Kosher salt, to taste
  • Black pepper, to taste
  • 2 small (6 ounces) tomatoes (peeled and seeded, coarsely chopped)
  • 4 scallions, thinly sliced
  • 2 chiles (red Thai chiles thinly sliced with seeds)
  • 1 garlic clove, smashed
  • 4 ounces coconut milk (1/2 cup, unsweetened)
  • 1 1/2 teaspoon honey
  • 1/4 cup fresh cilantro leaves
  • Lime juice (1 squeeze of fresh lime juice)

How to Make

  • Step 1: Heat 1 tablespoon vegetable oil in a medium saucepan over medium heat. Add cucumber. Saute until beginning to soften, about 1 minute. Season with salt and pepper.

  • Step 2: Add tomatoes, scallions, chiles, and garlic. Saute until the vegetables are soft, 2-3 minutes.

  • Step 3: Add the coconut milk and honey, simmer until the vegetables are cooked through, 2-3 minutes. Stir in cilantro and lime juice. Season with salt and pepper to taste. Serve with rice if desired.
