Step 1: Heat 1 tablespoon vegetable oil in a medium saucepan over medium heat. Add cucumber. Saute until beginning to soften, about 1 minute. Season with salt and pepper.
Step 2: Add tomatoes, scallions, chiles, and garlic. Saute until the vegetables are soft, 2-3 minutes.
Step 3: Add the coconut milk and honey, simmer until the vegetables are cooked through, 2-3 minutes. Stir in cilantro and lime juice. Season with salt and pepper to taste. Serve with rice if desired.
