  • 1/4 teaspoon baking soda
  • Salt, pinch
  • 2 large eggs
  • 4 ounces coconut oil (1/2 cup, melted)
  • 1/2 cup brown sugar
  • 1/2 cup maple syrup
  • 1/4 cup warm water
  • 1 1/2 cups shredded carrots
  • 1/2 cup raisins
  • Coconut strips (Optional for garnish)

How to Make

  • Step 1: Sift the flour, baking powder, cinnamon, ginger, allspice, baking soda and salt.

  • Step 2: In a separate bowl, combine eggs, coconut oil, brown sugar, maple syrup and water; beat well with electric mixer.

  • Step 3: Combine the egg mixture with the flour mixture and mix until moistened.

  • Step 4: Fold in the carrots and the raisins.

  • Step 5: Spoon into 12 paper lined muffin cups or silicone muffin cups that have been coated with non-stick spray.

  • Step 6: Bake in preheated 350 degree Fahrenheit oven for 25 to 30 minutes or until a toothpick inserted in the middle comes out clean.
