Ingredients

The ingredients are:
  • 2 cans (15 1/2 ounce) hominy (drained)
  • 8 ounces dry rice (dry, 1 cup)
  • 1 1/2 pounds chicken legs
  • 1 1/2 pounds bone-in skin-on chicken thighs
  • 2 cups chicken broth
  • 1 tablespoons parsley
  • Seasoned salt (dash)
  • Pepper, dash
  • 1 yellow onion (chopped)
  • 1 pound sliced mushrooms

How to Make

  • Step 1: Spread the hominy in bottom of baking dish. Sprinkle on rice then the parsley.

  • Step 2: Top with vegetables. Seasoning over hominy, and top with chicken pieces.

  • Step 3: Chicken broth cover with foil.

  • Step 4: Bake 375º for 90 minutes until chicken is done.

  • Step 5: Yield: 8 servings.
