Ingredients

The ingredients are:
  • 1 cup oats (quick-cooking)
  • 1 cup all-purpose flour
  • 2 tablespoons sugar substitute (Truvia, or 5 tablespoons sugar)
  • 1 tablespoon baking powder
  • 3/4 teaspoon ground cinnamon
  • 1/4 teaspoon nutmeg
  • 1/2 teaspoon kosher salt
  • 2 tablespoons butter (softened and cut into small pieces)
  • 1 large egg
  • 1/2 cup milk
  • 1 teaspoon vanilla
  • 1 teaspoon lemon juice
  • 80 grams dried cherries (1/2 cup)

How to Make

  • Step 1: Preheat oven to 400 degrees F.

  • Step 2: In the bowl of a food processor pulse the oats for a minute; add rest of dry ingredients (-salt) and pulse until blended. Add butter and pulse until combined.

  • Step 3: In a bowl whisk together the wet ingredients (egg - lemon juice). Stir in dry mixture and then stir in the cherries.

  • Step 4: Transfer dough to a floured work surface and pat into a 10-12 inch circle. With a knife cut dough into 8 wedges.

  • Step 5: Transfer wedges to parchment lined cookie sheet and bake for 12-15 minutes or until golden brown.

  • Step 6: Let cool in pan for 5 minutes before transferring to wire rack to cool completely.
