Ingredients

The ingredients are:
  • 350 grams dry pasta (such as casarecce or penne)
  • 1 can (400 grams) roma tomatoes (baby roma)
  • 1 can (420 gram) pasta sauce (red wine Bolognese pasta sauce)
  • 1 bottle (275 gram) marinated artichokes (drained and chopped)
  • 1 bottle (290 grams) roasted peppers (sweet peppers, drained and chopped)
  • 1/4 cup parsley, finely chopped
  • 1 tablespoon rosemary, coarsely chopped
  • 2 cups vegetable stock (500ml)
  • 1 cup cheddar cheese, grated (120 grams)
  • Parsley, to serve
  • Mixed salad leaves, to serve

How to Make

  • Step 1: Preheat oven to 200C.

  • Step 2: Grease a 12 cup (3 litre) baking dish.

  • Step 3: Combine the pasta, tomatoes, pasta sauce, artichoke, baby peppers, chopped parsley and rosemary in the prepared dish.

  • Step 4: Pour in stock and 1 1/2 cup (375ml) water and cover with baking paper, then with foil and bake for 20 minutes and the uncover and stir and then continue to bake, uncovered for a further 25 minutes or until the liquid is almost absorbed and the sauce thickens.

  • Step 5: Sprinkle over the cheese and bake for a further 5 minutes or until golden.

  • Step 6: Set aside for 10 minutes to cook and sprinkle with parsley leaves and serve with salad.
