Ingredients

The ingredients are:
  • 5 grams dried mushrooms (6 dried mushrooms)
  • 2 tablespoon oil (vegetable oil)
  • 1 kilogram beef short ribs (cut into about 10cm lengths)
  • Fresh ginger (5 generous slices)
  • 4 large garlic cloves (squashed)
  • 1/2 cup soy sauce (dark)
  • 1/2 cup sugar (yellow rock sugar, from your Asian grocer)
  • 2 tablespoon black beans
  • 1 cinnamon stick
  • 2 star anise
  • 4 cups chicken stock
  • 1/2 cup spring onions, sliced (cut into 3cm lengths)

How to Make

  • Step 1: Soak the dried mushrooms for 1/2 hour in warm water.

  • Step 2: Heat vegetable oil in a heavy based pot and cook the ribs over a moderate heat until they are browned over.

  • Step 3: Discard any remaining oil and then add all remaining ingredients to the pot except the spring onion, there should be enough liquid to just cover the ribs, if not add a little water and bring to the boil, lower the heat to a very gentle simmer and cook for 2 hours or until the meat is very tender.

  • Step 4: Add the spring onions and cook for 5 minutes longer.

  • Step 5: Serve with rice, an Asian green, some of the liquid and garnish with coriander leaves if liked.
