Step 1: Using a bread knife slice the loaf of bread length ways(top of bread to almost bottom) 3 to 4 times, making sure you do not cut all the way through to the bottom. Turn the bread and repeat cutting the opposite way and set aside. (Cutting is like a criss cross pattern from top to almost bottom of the bread.)
Step 2: In a bowl add the cooked bacon, shallots, cheese and garlic and mix together.
Step 3: Lay out some tin foil and place on the bread, rubbed with a little bit of water to lock in the moisture. Use one hand to open the cut slices and the other to sprinkle the bacon cheese mixture into all the cuts in the bread. Wrap the bread in foil then place next to the fire in some hot coals and shovel some coals on top of the package and let cook for 15-20 minutes.
Step 4: Once the bread is toasted and the cheese melted, carefully take you bread package out of the fire and open it up and serve by tearing it up.
