  • FOR BUTTERSCOTCH PIE
  • 1 baked (8-inch) pie shell
  • 1 1/2 cup brown sugar
  • 3 tablespoons all-purpose flour
  • 2 tablespoons granulated sugar (white)
  • 3 tablespoons cornstarch
  • 1 1/2 cups water
  • 2 egg yolks
  • 3 tablespoons butter
  • 1/8 teaspoon vanilla extract
  • FOR MERINGUE
  • 4 egg whites
  • 1/4 teaspoon salt
  • 8 tablespoons granulated sugar
  • 1 teaspoon vanilla extract

How to Make

  • Step 1: Mix together, the flour, cornstarch, brown and white sugar.

  • Step 2: Add water and cook until very thick, stirring constantly.

  • Step 3: Add slightly beaten tempered egg yolks; cook 1 minute, stirring constantly. Remove from heat; add butter, salt and vanilla then allow to cool. Pour into crust

  • Step 4: Top with meringue and bake 12 minutes in oven at 350 longer if needed until browned.
