Ingredients

The ingredients are:
  • 1 can (15 ounce) hominy
  • 1 can (8 ounce) enchilada sauce (green)
  • 9 ounces cooked chicken breast (shredded, 2 cups)
  • 2 cans (4 ounce) diced green chilies
  • 2 large eggs (beaten)
  • 4 ounces sour cream (1/2 cup)
  • 1 cup shredded cheese
  • 3 green onions, chopped

How to Make

  • Step 1: Spray a 2 quart baking dish with cooking spray.

  • Step 2: In a baking dish, combine all ingredients except for the cheese (I used a 2 quart casserole dish). Season to taste

  • Step 3: Top with shredded cheese.

  • Step 4: Cover with foil and bake for 20 minutes.

  • Step 5: Uncover and bake for another 10 minutes.

  • Step 6: Allow to sit for 10 minutes and serve.

  • Step 7: Top with green onions.
