Ingredients

The ingredients are:
  • 1 1/2 cups panko breadcrumbs
  • 1/2 teaspoon garlic powder
  • 1 teaspoon paprika (smoked)
  • 1/3 cup parmesan cheese, finely grated
  • 2/3 cup all-purpose flour (plain)
  • 2 large eggs
  • 1 kilogram chicken wings (disjoint and use only two meatiest bits discard tips or use for stock)
  • Olive oil cooking spray
  • 400 grams frozen shoestring fries
  • 4 ounces low-fat yogurt (Greek style, 1/2 cup)
  • 1 tablespoon lemon juice
  • 1 tablespoon dill leaves, chopped plus extra sprigs to serve
  • Salad and lemon wedges to serve

How to Make

  • Step 1: Preheat oven to 230C/210C fan forced.

  • Step 2: Line a large baking tray with baking paper.

  • Step 3: Combine breadcrumbs, garlic powder, paprika and parmesan in a large bowl and season with salt pepper.

  • Step 4: Place flour in a large bowl, whisk eggs in a separate bowl.

  • Step 5: 1 at a time, toss chicken nibbles in flour, shaking off excess then dip in egg, then toss in breadcrumb mixture to coat and then place in a single layer on prepared tray and spray liberally with olive oil spray.

  • Step 6: Bake for 20 minutes or until golden and chicken is cook through.

  • Step 7: Meanwhile, cook the fries following the packet directions.

  • Step 8: Combine yoghurt, lemon juice and dill in a bowl and season with salt and pepper to taste.

  • Step 9: Sprinkle chicken with extra dill sprigs and serve with fries, yoghurt mixture, salad and lemon wedges.
