Ingredients

The ingredients are:
  • 1 pound boneless skinless chicken breast (2 breasts)
  • Salt, pinch
  • Black pepper, pinch
  • 2 tablespoons crumbled goat cheese
  • 2 teaspoons fresh basil, chopped
  • 1 teaspoon fresh lemon zest
  • 1/2 cup bread crumbs (seasoned)
  • 1 teaspoon curry powder
  • 1/4 teaspoon garlic powder

How to Make

  • Step 1: Preheat oven to 350°F.

  • Step 2: Place each chicken breast between two sheets of wax paper. Pound out to an equal thickness throughout. Salt and pepper each breast.

  • Step 3: In a bowl, mix bread crumbs, curry powder and garlic powder. Set aside.

  • Step 4: Place half of the goat cheese, basil and lemon zest on each of the chicken breasts. Roll up and place in bread crumb mixture to coat all sides well.

  • Step 5: Place in baking dish that has been foil-lined and sprayed with non-stick cooking spray. Bake in preheated 350°F oven for 1 hour.
