Ingredients

The ingredients are:
  • 8 ounces dry rice (dry, 1 cup)
  • 1/4 cup whole kernel corn (frozen)
  • 1/4 cup yellow onions (chopped)
  • 1 cup chicken stock
  • 1 cup salsa
  • 1 tablespoon taco seasoning
  • 24 ounces pork loin chops (4 chops, 6 ounce each)
  • 1 can (15 ounce) refried beans
  • 1 cup shredded cheddar cheese
  • FOR TOPPING
  • 2 green onions, chopped
  • 2 ounces sour cream (4 tablespoons)

How to Make

  • Step 1: In 9x13 Pam sprayed casserole, layer in rice ,corn and onions.

  • Step 2: Pour in salsa and stock.

  • Step 3: Pork chops. Sprinkle taco seasoning.

  • Step 4: Cover tightly, then bake 350 degrees for 1 hour.

  • Step 5: Uncover, dot on refried beans and cheese. Recover and bake 30 more minutes.

  • Step 6: Serve with sour cream and green onions.
