  • 2 tablespoon brown sugar
  • 2 tablespoons oil (vegetable oil)
  • 1 tablespoon finely grated carrot
  • 1 teaspoon mixed spice
  • 1 large egg (slightly whisked)
  • 1/4 cup ice cream (vanilla, 1 scoop)
  • 1 tablespoon pecan nuts (toast and coarsely chopped)
  • 2 tablespoons caramel sauce

How to Make

  • Step 1: Whisk flour, sugar, oil, carrot, spice and egg in a 1 1/2 cup microwave safe mug.

  • Step 2: Microwave on medium (50%) for 1 1/2 minutes or until cake is cooked when a skewer inserted at centre comes out clean and stand for minutes.

  • Step 3: Serve topped with ice-cream, pecans and caramel sauce.
