  • 1/4 cup self-rising flour
  • 2 tablespoons caster sugar
  • 2 tablespoon oil (vegetable oil)
  • 2 tablespoons shredded coconut
  • 1 large egg (lightly whisked)
  • 1 teaspoon lemon zest
  • 1 tablespoon lemon juice
  • Whipped cream, to serve
  • 2 tablespoons lemon curd
  • Pink meringues (crushed, 2 mini)

How to Make

  • Step 1: Whisk flour, sugar, oil, coconut, egg, zest and juice in a 1 1/2 cup microwave safe mug.

  • Step 2: Microwave on medium (50%) for 1 1/2 minutes or until cake is cooked when a skewer inserted at centre comes out clean and stand for 5 minutes.

  • Step 3: Serve topped with cream, curd and meringue.
