Step 1: Preheat oven to 300C/180C fan forced.
Step 2: Line a oven tray with baking paper.
Step 3: Combine spice mix and sugar in a large bowl.
Step 4: Reserve 1 tablespoon of sugar mixture.
Step 5: Add apple to remaining sugar mixture and toss to coat.
Step 6: Stack pastry sheets on a clean work surface and brushing with butter and sprinkling with crushed nuts between sheets.
Step 7: Using a 7cm round cookie cutter cut 8 discs from pastry ad place pastry discs on prepared tray.
Step 8: Stack apples evenly on pastry discs and sprinkle with reserved sugar mixture and bake for 40 minutes or until apple is tender and pastry is crisp.
Step 9: Serve apple stacks with custard.
