Ingredients

The ingredients are:
  • 3 tablespoons olive oil
  • 2 pounds boneless skinless chicken breast (cut in cubes)
  • 1 cup yellow onion, diced
  • 3 cloves garlic, minced
  • 1 teaspoon turmeric
  • 1 tablespoon all-purpose flour
  • Salt, dash
  • Pepper, dash
  • 1 can (15 ounce) diced tomatoes
  • 1 bag (8 ounce) frozen okra
  • 1/2 teaspoon cumin (to taste (it called for 1 Tablespoon cumin seeds,to much for us here mostly)
  • Cayenne pepper, dash
  • 2 cups water
  • FOR THE SIDE
  • 46 ounces mashed potatoes (4 cups mashed)

How to Make

  • Step 1: Heat oil, add onion; cook lightly. Add chicken then brown.

  • Step 2: Add garlic, flour and spices, don't burn.

  • Step 3: Add tomatoes, water and okra. Simmer 30 minutes until thickened.

  • Step 4: Serve over potatoes.
