Ingredients

The ingredients are:
  • 1 tablespoon butter
  • 100 ml cream
  • 15 grams sun-dried tomatoes (1/4 cup)
  • 1 avocado (diced)
  • 320 grams bacon (12 slices or 4 full rashers)
  • 150 grams goat cheese (goat fetta cheese)
  • 4 whole eggs
  • 8 whole eggs
  • Parsley (1/4 bunch)
  • Tabasco sauce, to taste
  • Salt, to taste
  • Pepper, to taste
  • 100 grams sour cream
  • Toast, to serve

How to Make

  • Step 1: Preheat the oven to 200C.

  • Step 2: Butter 4 ramekins and layer them with bacon around the inside.

  • Step 3: Mix the first 4 eggs with the herbs, whisk a little and pour into the centre of the ramekins.

  • Step 4: Add the goats cheese, avocado, sundried tomatoes, tabasco sauce, salt and pepper, and crack a couple of eggs on top of each ramekin (second lot of 8 eggs).

  • Step 5: Place into the pre-heated oven for 8 to 12 minutes or until the whites have cooked.

  • Step 6: Serve with a little sour cream and toast, a perfect breakfast!
