  • 6 plum tomatoes (diced)
  • 2 cloves garlic (minced)
  • 6 basil leaves (chopped)
  • 4 green onions (white parts only, sliced thin)
  • 1/4 cup plus 1 tablespoon olive oil
  • Salt and pepper, to taste
  • 1 baguette french bread

How to Make

  • Step 1: Preheat oven to 450 degrees Fahrenheit.

  • Step 2: Slice the baguette into rounds and brush both sides with olive oil.

  • Step 3: Place the baguette slices on a baking sheet and cook for about 5 minutes, until golden.

  • Step 4: Remove from oven and set aside.

  • Step 5: Mix the tomatoes, garlic, basil, green onions and 1 tablespoon olive oil together in a bowl; season with salt and pepper.

  • Step 6: Spoon tomato mixture over baguette rounds and serve.
