Step 1: In a medium saucepan, combine the wine with the sugar, bay leaf, cinnamon, lemon and orange zests, and pepper. Bring to a boil over high heat, and after boiling - reduce the heat to medium-low, simmering until reduced to 1/3 cup, (takes about 30 minutes).
Step 2: Pour the sauce through a fine sieve into a bowl and keep sauce warm.
Step 3: Brush the bread with olive oil and grill, turning once, until charred (until your liking) on both sides, which will take about 5 minutes or so.
Step 4: Divide the toast between four plates and top each toast with a scoop of ice cream and some of the strawberries.
Step 5: Drizzle the wine syrup over the berries & serve.
