Ingredients

The ingredients are:
  • 2 cups red wine
  • 50 grams granulated sugar
  • 1 bay leaf
  • 1 cinnamon stick
  • 1 lemon, zest of, finely grated
  • 1 orange, zest of, finely grated
  • Freshly ground black pepper (pinch)
  • 4 slices (4 ounces) white bread (sliced 1cm thick)
  • 1/4 cup olive oil
  • 500 grams strawberries (2 punnets, hulled and halved)
  • Vanilla ice cream, for serving

How to Make

  • Step 1: In a medium saucepan, combine the wine with the sugar, bay leaf, cinnamon, lemon and orange zests, and pepper. Bring to a boil over high heat, and after boiling - reduce the heat to medium-low, simmering until reduced to 1/3 cup, (takes about 30 minutes).

  • Step 2: Pour the sauce through a fine sieve into a bowl and keep sauce warm.

  • Step 3: Brush the bread with olive oil and grill, turning once, until charred (until your liking) on both sides, which will take about 5 minutes or so.

  • Step 4: Divide the toast between four plates and top each toast with a scoop of ice cream and some of the strawberries.

  • Step 5: Drizzle the wine syrup over the berries & serve.
