Ingredients

The ingredients are:
  • 16 ounces beef broth (2 cups)
  • 225 grams dry rice (1 cup dry long-grain white rice)
  • 1 pound lean ground beef
  • 1 packet (1 1/4 ounce) taco seasoning mix (the mild kind if serving to kids)
  • 2 teaspoons garlic powder
  • 1 large red onion, finely chopped
  • 1 green bell pepper, finely chopped
  • 3/4 to 1 cup whole kernel corn (canned, drained or frozen)
  • 1/2 cup water
  • 1 1/2 cups salsa
  • Salt & pepper

How to Make

  • Step 1: Add beef stock to a saucepan and bring to a boil. Add rice, cover, and cook until done, about 25 minutes.

  • Step 2: While the rice is cooking, brown ground beef in a skillet, about 8 minutes. Add onion and bell pepper and cook, stirring occasionally, for 7 minutes. Mix in canned corn (if using frozen corn, add and and cook for 3 minutes). Add water, taco seasoning mix and garlic powder. Turn down the heat and cook until the meat is done and the liquid is almost completely absorbed, 5-10 minutes.

  • Step 3: When rice is cooked, stir it into the meat and vegetables. Turn off the heat and mix in salsa. Add salt and pepper. Serve.
